Oven Baked Eggs are fast, low carb and perfect for breakfast, dinner or in between! Use a muffin tin or go fancy with ramekins. Use all your favorite ingredients!

Preheat oven to 425 degrees F. Spray ramekin well with cooking spray.
Line each ramekin with half of the pepperoni. Place half of spinach in each ramekin. Crack egg on top of spinach. Lightly salt with kosher salt.
Top each ramekin with 1/2 slice of cheese.
Bake for 15 - 20 minutes or until bubbling and very lightly browned. Egg should be set.
Serve with hot ketchup or your favorite accompaniment.
