Perfectly Baked Eggs in Cups: Brunch irresistibly!

Baked Eggs may be the perfect brunch dish – you can make them and forget them, and you can prep as many or as few as you want. Everyone can decide how many they want to eat, and you can use your favorite ingredients (or what’s in the fridge)! Make these in advance and keep them warm, or make them way in advance and warm them up last minute.

If you do make them in advance:

Cook them completely before storing them in the refrigerator. When you’re ready for them, warm them in a moderate oven (325 degrees) for 5 minutes or so until warmed through.

You can use the ever classy 4 ounce ramekins (affiliate links) or use one (or two) regular sized muffin tins. If you want to go super easy, combine everything in one big casserole and make indents for the eggs. Ooo la la – so pretty!

Baked Eggs can include whatever you like

Switch out the spinach for chopped mushrooms or bell peppers. Use ham instead of pepperoni. Try adding a couple tablespoons of heavy cream instead of cheese. Shirred eggs are a fancy way of saying you’re loving that cream. Slightly decadent but still so delicious.

Make sure you spray whatever cooking vessel you decide to use copiously. Set the oven to preheat early and have some fun creating.

Salt the eggs before adding the cheese (or cream).

If you’re using ramekins, place them on a baking sheet before cooking. Those little stinkers get slippery when they’re hot.

I’m pretty sure I’d get Chopped, but I think the ideal “sauce” is hot ketchup. Use Heinz Ketchup (of course) and add as much Tabasco sauce as you like. (I tend to go a little heavy…)

I like to scoop them out onto a plate or platter to serve, but leaving them in the ramekins is fine too. If you’re using a big casserole, cut around the eggs and use a big serving spoon.

Oven Baked Eggs are fast, low carb and perfect for breakfast, dinner or in between! Use a muffin tin or go fancy with ramekins. Use all your favorite ingredients!

  • Preheat oven to 425 degrees F. Spray ramekin well with cooking spray.
  • Line each ramekin with half of the pepperoni. Place half of spinach in each ramekin. Crack egg on top of spinach. Lightly salt with kosher salt.
  • Top each ramekin with 1/2 slice of cheese.
  • Bake for 15 – 20 minutes or until bubbling and very lightly browned. Egg should be set.
  • Serve with hot ketchup or your favorite accompaniment.

Add mimosas and it’s a party! ♥
