  • Heat saucepan over medium-high heat. Saute onion in cooking spray until translucent, about 5 minutes.
  • Add chopped broccoli and just cover with water. Add chicken soup base or substitute your favorite vegetarian soup base. Cover and bring to a boil.
  • Cook until broccoli is tender, about 7 minutes.
  • Add coconut milk and blend soup with an immersion blender, a food processor or even a potato masher.
  • Check for seasoning and serve immediately. Add cheese if desired.
