Parmesan Garlic Pork Tenderloin is low carb, low fat and super high taste! This easy pork tenderloin recipe is ready fast when baked but works perfectly in the slow cooker too.
Clean all silver skin from tenderloins. Pierce the flesh with multiple slits cut with a paring knife, about 1" apart.
Slice 1 garlic clove very thinly with paring knife. Stuff slices of garlic into slits on tenderloin.
Salt & Pepper well, and dot with about 1 tablespoon of butter. Place in preheated oven. Pork will bake in oven for 25 - 30 minutes. Conversely, cook tenderloin in crock pot on low for 4 to 5 hours, or high for about 2 hours.
Pork Tenderloin is cooked when internal temperature reaches 145 degrees to 150 degrees F. Let sit, loosely covered with foil, for 5 minutes or so.
Meanwhile, chop the remaining garlic cloves finely. You are looking for about 1 tablespoon of well minced garlic for the sauce.
Place remaining 2 tablespoons butter, chopped garlic, parsley and Parmesan in small sauce pan. Melt butter and stir well over medium heat. Turn off heat when sauce is combined. If there are any pan juices, add up to a few tablespoons to sauce.
Slice tenderloin and spread Parmesan Garlic sauce over. Serve immediately.
