We’re going nuts for walnuts during the Weekly Menu 05.17.26~

We’ve got an abundance of walnuts on the Weekly Menu 05.17.26 because we love walnuts. And Bert may have bought another bag o’ nuts the last time he was at Sam’s. Serendipitously, Sunday is World Walnut Day. (And, yes, if you’re wondering, there IS a day for everything.)
I love walnuts. I think they may be my favorite baking nut (almonds still rule for snacking). They are fascinating on the tree. They don’t look anything like they do once they’ve been processed.

Sunday Supper during the Weekly Menu 05.17.26 has a couple of different applications of the mighty walnut. We’re trying some roasted grapes on a salad, so some coarsely chopped walnuts will pair well with the arugula, grapes, and crumbled blue cheese. Have you ever had roasted grapes? I have not, and I’ve been seeing them all over the place with people raving about them, so we’re giving it a go.
And, yes, that IS “PARTY FRITOS” for the appetizer on Sunday. It’s an old-fashioned recipe that coats Fritos with a little butter, garlic powder, and Parmesan cheese, before popping them in the oven to bake for a few minutes. I love me some Fritos (I usually go for the chili-cheese variety), so this looks absolutely fabulous. It’s new to us, but how bad can it be?
We’re finishing up our Grilled Jambalaya dinner with Walnut Pie and Maple Whipped Cream for dessert. Think pecan pie, taken out of the south. I adore pecan pie, but the cost of making it is prohibitive on a Sunday in May. And since we have the walnuts in house…
We’ve got Bert working the grill for days this week. The deconstructed Jambalaya on Sunday, burgers on Monday, and grilled chicken for the street tacos on Tuesday. We’ve got a “hot-dish” on Wednesday, with Sloppy Joes topped with tater tots. In order to get dinner on the table quickly, while I’m prepping the sloppy joes, I’ll get the tots in the oven. When the sloppy joes are ready to go, I’ll top the meat mixture with a little cheese and toss on the partially cooked tots, then pop back in the oven for a few more minutes until the potatoes are crispy. Yum.
