The Weekly Menu 03.01.26 is an homage to one of our favorite ingredients – Peanut Butter!

National Peanut Butter Lover’s Day is on Sunday during the Weekly Menu 03.01.26! It was a real toss-up to decide on dessert, gentle reader, because there are just so many great options! And I think we eat a LOT of Peanut Butter, but while the United States is a major producer of Peanut Butter, about 10 countries consume more than we do.
By far, China is the country that consumes the most peanut butter. In 2023, the country consumed 4210 TMT worth of peanut butter. This is over twice as much as the second-place country, India, which was only responsible for consuming 1494 TMT worth of peanut butter in 2023.
After these two countries, the amount of peanut butter consumed by various countries around the world dropped dramatically. Myanmar, for example, consumed 309 MT worth of peanut butter in 2023 while Sudan only consumed 255 MT. Nigeria consumed nearly as much as Sudan in 2023 but only managed to consume 245 MT worth of peanut butter in 2023.
Tanzania is next on the list with 170 MT worth of peanut butter consumed in 2023. This country is followed by Burkina Faso with 153 MT worth of peanut butter consumption in 2023. Next on the list is the United States. People in the US consumed 152 MT worth of peanut butter in 2023, which is just slightly more than Brazil, which consumed 148 MT.
The United States produces about 2.5 million tonnes, but is dwarfed by China at 18.3 million tonnes annually. (Ton is the imperial weight, and a tonne is metric – one US Ton equivals .90785 metric tonnes – Google)
So what are OUR faves?

What made the cut during the Weekly Menu 03.01.26? I was leaning towards the Chocolate Chunk Cookies, but that recipe calls for almost a pound of premium chocolate, and the price on that has been through the roof! We’re opting for a mini-chocolate chip-laced Peanut Butter Pie. It’s comforting, and the peanut butter is super mild with the addition of the cream cheese. And I can usually stop at a sliver, which does NOT happen with the cookies. I could make the cookies with a bag of chocolate chips. Maybe I’ll do that later in the week.
We also have the Asian Peanut Noodles on the menu. I almost always pair them with the Shredded Chicken Joes, although they would go with anything. They are ridiculously easy: while you boil the noodles, the rest of the ingredients are mixed together in the serving bowl, and then they’re married. We like them best warm, although they’re delightful as leftovers the next day too.
Meatless Monday is Marry Me White Bean & Spinach Skillet. Try it before you scoff – this is one of the most popular dishes I’ve made around here. I will definitely double the recipe for dinner. It’s fast and easy too. Total Trifecta.
