Sometimes a sammie is the absolute best possible way to approach dinner. They’re easy, compact and usually pretty economical. This one is made with deli ham, your favorite cheese, a tasty spread and BACON!

The Ham and Bacon Sandwich is great on a picnic too – I like to wrap it up in wax paper to make sure there are no spills or grease break-throughs. You can pack everything in a grocery bag, but for that extra special treat, (or if you go on a fair amount of picnics) opt for this darling picnic basket:

Chips or pretzels, cold grapes and a nice bottle of Riesling or Prosecco will round out the offering nicely. Maybe some chocolate too!

Ham & Bacon Sandwich starts with a spread~

We really, really like Hoagie Spread. Especially when we mix it with some mayo and a dash or two of Frank’s Red Hot. We might like a bit of spice with our food. Or, honestly, … a lot. The Red Hot is optional for the spread – but the crushed peppers are not. The mayo really mellows them out though – they are not super spicy. Taste as you go.

Mix about 1/2 a cup of mayo with two big spoonfuls of Hoagie Spread in a small bowl. Sprinkle in a couple dashes of hot sauce and mix well. Set aside. Any leftover spread will hold in the fridge for at least a couple days.

Heat the oven to 425 degrees F. Meanwhile, spread your bacon in a single layer on a sheet pan. We always use a sheet pan for cooking bacon – it’s fast and easy, plus the clean up is a breeze. And the bacon stays in a beautiful flat piece. Most importantly, we can use the rendered bacon fat to toast the buns. Put the bacon in the oven once it’s heated, and bake for about 10 minutes. Once the bacon is crunchy and browned, take it out of the oven and move onto a paper towel covered plate using a metal spatula.

We use about a piece and a half of bacon per sandwich. But you can use as much as you like.

Cut the buns in half, and place the cut side down on the sheet pan. These mini-sub rolls are perfect – they aren’t super hard, and they make a nice size sammie.

CHEF’S NOTE

The buns toasting in bacon fat is the most important part of the recipe, hands down – do not skip this step!

Pop the buns back in the oven until they are toasted on the cut side. They’ll be a little browned on the top. This usually takes about 10 minutes. Check the buns to make sure they are done.

Time to assemble!

Cut the bacon in half, slice your favorite cheese into decent size chunks (this is mozzarella) and lay out your favorite deli ham.

Smear the spread on the top of the bun, and put some cheese on the bottom.

Add the ham and the bacon.

Combine the sides and slice in half. Sandwich heaven.
