A long (long) time ago, I remember skating on Presque Isle Bay with my Uncle Frank and his family. Skating was not something my parents were interested in, but Uncle Frank et al actually seemed to enjoy it. I was laced into a borrowed pair of skates and entered the skating area.

It scared the bejesus out of me.

Looking back, I’m sure that Uncle Frank had scoped the area well, but the possibility of sinking through the ice seemed like a real possibility to me.

Weekly Menu 01.12.20

From time to time we went to Open Skate at our local ice arena. Mostly I remember how bad my shins hurt, but one time when I was about twelve I made what I thought was a love connection. The two of us skated around (or picked themselves up off the ice, depending on how it was going) for quite a while. Until he grabbed the front of my sweater to keep himself from hitting the deck. I was rightly affronted and gave him a loud “Hey!” To which he responded “wait – are you a girl?” Tres Sigh.

I wore my hair long for years after that.

And then I married a hockey player. Team watcher. And all around awesome skater. Pittsburgh has an outside skating rink (North Park) that I don’t fear too much – it is outside, but it’s not on a lake. So I can’t sink through, but I can fall. Often. But they have a Bubble Hockey Game (affiliate link – see disclaimer for more info) and a really good restaurant, so I’ll suck it up.

There’s little outside skating this year – we have been way above average, temperature-wise, for both December and January. It’s 45 degrees as I write this. Fingers crossed for February and March freezes.

Our Weekly Menu 01.12.20 has a bit of low carb goodness throughout. The crock pot is out – and will remain so for most of the week. On Wednesday, we’re having a “fried” not-fried rice. I’ll toss in a scrambled egg and peas (and some tamari sauce) but it won’t be fried. It’s a nice, easy side for midweek. More on that later.

We’re planning on leftovers Saturday – paninis are a great way to use what’s in the fridge and look like you went to a great deal of effort. They are just squished sandwiches, after all. Speaking of leftovers, I made Creamy Black Bean Dip to go with tacos this week. I’m going to use what’s left of that on the Taco Pizza instead of the refried beans. Yum.
