What’s phyllo dough? It’s commonly known as the basis for Baklava – super thin sheets of pastry stacked and layered with butter. How bad could that possibly be?

Filo or phyllo (Greek: φύλλο “leaf” or “sheet”) is a very thin unleavened dough used for making pastries such as baklava and börek in Middle Eastern and Balkan cuisines. Filo-based pastries are made by layering many sheets of filo brushed with oil or butter; the pastry is then baked.

Machines for producing filo pastry were perfected in the 1970s, and have come to dominate the market.[6] Filo for domestic use is widely available from supermarkets, fresh or frozen.

Our Cranberry Cheese Phyllo Cups use pre-made phyllo cups. You don’t even have to cook them. You can find them in the freezer section of your grocery store, by the pie crust. Let them thaw on the counter before you start.

No room in the oven?

If you’re running slim on space in the oven, you can skip broiling the Cranberry Cheese Phyllo Cups by melting the cheese in the microwave. Use a glass mixing bowl (affiliate links follow – see disclaimer for more info). Heat on high for 15 – 30 second bursts at a time until the cheese is gooey enough to spoon into the cups. Add the cranberry sauce mixture and serve.

This is how the phyllo cups are packaged – just thaw and use. They’re nice and crispy as is. Fill them with your favorite cheese.

We used Swiss, because I had some in the fridge, but brie would be spectacular. Gruyere is always tasty too. Use whatever you like. You can cut sliced cheese as we did above, or use shredded. Chop up the Gruyere or brie so it will melt quickly. The phyllo cups will burn a bit around the tops if you’re not careful. Don’t worry though – it gives them a little bit of charm.

No oven space?

Pop the cheese filled cups on a microwave safe plate and heat on high for 8-10 seconds.

While you’re melting the cheese, open up a can of cranberry sauce. (Use fresh-made sauce if you have it!)

Mix up the cranberry sauce with the vinegar and a smidge of salt. I like to use a little whisk to make sure everything is incorporated.

Plate the cups with the melted cheese and spoon on a teaspoon or so of the cranberry sauce. Serve warm.

Ingredients

  • 1 container Frozen Phyllo cups, thawed (12 pieces)
  • 4 ounces Swiss, Brie or Gruyere Cheese, shredded or chopped
  • 1/2 cup Cranberry Sauce
  • 1 tsp Red Wine Vinegar
  • Kosher Salt

Instructions

  • Preheat oven to broil.
  • Place phyllo cups on baking sheet. Spread cheese evenly into cups.
  • Broil until cheese is melted, 4 to 7 minutes. Keep an eye on these – they will crisp and burn quickly.
    If you don't have the oven available, melt the cheese in the microwave in 15-30 second bursts. Spoon into the phyllo cups when creamy.
  • Meanwhile, combine cranberry sauce, vinegar and a sprinkle of kosher salt in a small bowl. Whisk well.
  • Place about 1 teaspoon of cranberry mixture on top of melted cheese. Serve immediately.
