Tired of Kale? (Or do you just hate it, like I do?) Go back to a classic – but punch it up with a twist! The Wedge Salad is a classic for a reason. It’s delicious, easy and cheap. Make it a “Mini Wedge” and mix up the dressing and toppings for your own signature salad!

What is a Wedge Salad?

  • One quarter of an Iceberg Lettuce Head
  • Blue Cheese Dressing & Crumbles (Ideally)
  • Bacon
  • Tomatoes
  • Chives or green onion

And they’re delicious – with just a couple of issues.

  • They’re HUGE
  • If you don’t love Blue Cheese, you’re out of luck

What to do? Mini Wedge Mix Ups!

Cut the iceberg into smaller chunks, add your favorite dressing and top it up to match your mood. Iceberg lettuce gets a bad rap. Is it the best lettuce for you? Probably not. But what it lacks in color, it more than makes up for in sheer crunchy goodness. Plus – no bitterness!


Nutritional benefits of iceberg lettuce

Despite its reputation for being a complete zero on the nutritional scale, iceberg lettuce provides significant amounts of vitamins A and K. It also has small amounts of many other healthy nutrients. Although it’s low in fiber, it has a high water content, making it a refreshing choice during hot weather. It also provides calcium, potassium, vitamin C, and folate.

Perfectly cut for Mini Wedge Salad. Cut the half in half again from stem to head, then cut into cross wise pieces. It’ll fall apart, so put it on directly on your serving platter. Another great option? (Affiliate links follow – see Disclaimer Page for Details.)

Add a short skewer or fancy toothpick. No need for a serving fork! Push it right through the middle of the mini wedge and add the dressings and toppings around it.

Put a nice amount right over the middle. This is Creamy (dreamy) Parmesan.

If you’re going classic, next add the chives or red onions.

Pro-tip:

If you want to mellow the red onion out a bit, thinly slice it and put it in a small bowl. Cover it with tap water and sprinkle kosher salt on top. Then let it sit – preferably a half hour or so, but even a few minutes in the water before you drain them will tone down the onion flavor.

Add your tomatoes and then the star of the show – some crunchy bacon.
