Parmesan Ranch Cauliflower Bites (NRR!)

This How-To is for cauliflower – but it works great for broccoli as well. You can even make this low carb side dish as a substitute for fries. The roasted Cauliflower Bites are just that good.

Get started by pre-heating the oven. If you are only cooking the Cauliflower Bites, get the oven to a toasty 450 degrees F. If you’re cooking something else at the same time, you can adjust the cooking time for the cauli – if your oven is set for 350 or 375, allow for a little extra cooking time for the bites to get crispy and brown.

Cut your cauliflower into florets. The smaller you cut the pieces, the faster they’ll cook. Put the cauliflower in a casserole or baking sheet sprayed with cooking spray. (Affiliate links follow – see disclaimer for details.)

Try to keep the cauliflower in a single layer. It will shrink as it cooks – the water evaporates as it gets crispy. Plan accordingly to get the right quantity for serving. This was about a half of a head, and it served two (hungry) people.

Drizzle the cauliflower with olive oil. Sprinkle with dry Ranch Dressing Mix. I used about 1/2 a tablespoon of oil and the same amount of Ranch Mix. Sprinkle on ground black pepper.

Roast!

Plan on about 20 minutes or so – they should be starting to get brown and a bit crispy. Take them out of the oven and sprinkle with finely grated Parmesan Cheese – about 2 tablespoons here. Toss well. Put them back in the oven for another 5 minutes or so until they get crispy and delightful!

Don’t worry if they aren’t all the same color – some will be crispier than others. Cook a little longer if you want them darker.

The only thing left to do is enjoy!
