Weekly Menu 02.17.19 has a little something for everyone

We’re starting out the Weekly Menu 02.17.19 with an Italian Feast!

It’s been a minute since the last one, and it was time. I jokingly say that I’m not Italian, but I play one in the kitchen. Nanny’s Chocolate Fudge Brownie Cake might not be Italian, but it is fabulous. I’ve made it a time or six, and it never lays around the way some deserts do.

(I’m looking at you Pecan Cream Pie. I had such high hopes.)

On Monday, we’re combining the awesome flavor of the Southwestern Cheeseburgers with the super fast and simple Chopped Burgers – which is perfect for a Monday, because: no forming patties or portioning. Dump and cook. Yippee! We’re combining the burgers with a super crunchy and tasty Mexican Chopped Salad – if you’ve never had jicama, give it a try. It tastes a little like a cross between a granny smith apple and a potato. Buy the smallest one you can find – they seem like they multiply once you start chopping them. Check out this “How to Prepare Jicama” video from WikiHow for some helpful hints.

Make the Macaroni and Cheese a little different on Tuesday – add Pepper Jack instead of regular cheddar.

It gives it a heady creaminess and a bit of heat. Perfect foil to the blackened tilapia.

Pizza Nachos seem like an unlikely dinner, but they have all the food groups: starch, protein, veggies and dairy. Plus they’re awesome while watching a movie.
