Sunday promises to be the oddest Easter ever. No mass, no guests, and no visiting. It can still be spiritual and special if we plan ahead and spend some time rejoicing! A Zoom meet-up will help too~

Our Easter Dinner Menu is perfect for an easy, celebratory dinner on Sunday. I’ve changed it up a little bit to use items we have in the house so we can continue our social distancing. The cheese ball subs in for a fancy cheese plate, and we’re fresh out of asparagus, so peas it is!

Rotating Chefs!

A cousin of mine told me that they were letting each of their kids plan and make dinner one night during the week. How great of an idea is that? Our Monday dinner would be perfect for anyone that doesn’t have a lot of experience cooking. The Chopped Burgers are a family favorite. For some reason, cooking them in a cast iron skillet with just a little salt and pepper brings out the flavor of the beef. The hardest part of this recipe is leaving the beef alone while it cooks.

The CrissCross Potatoes were one of my all time favorites growing up. My Mom started making them to use up the little spuds in the bottom of the potato bag. You start with butter melting in a pan and hone up your knife skills. You’ve got to try them!

Baking is Chemistry. I’m just saying.

I learned to cook by baking – and I still love it. The recipe for Carrot Cake comes from Ina Garten. It is neither low fat or low sugar, but it is spectacular. And crazy easy – it works every time. Let your budding baker give it a try.

The Carrot Cake recipe is actually for cupcakes, but I put the batter in three round cake tins to cook, and make a layer cake. If you don’t want to worry about getting the cake out of the pans, you can certainly make it in a single baking pan or casserole. It will still taste awesome!

The Weekly Menu 04.12.20 is certainly flexible, depending on what you have in the fridge and pantry. We’re going for a meatless meal on Tuesday. I’ll sub out the ground beef in our Easy Beef & Bean Burritos with canned beans. It’ll be an even faster meal and I’m betting the boysies won’t notice the missing beef. Keep it quiet.
