Weekly Menu 07.29.18

We are starting out his week with some fabulous grilled tuna steaks. We are not one of those families where everyone loves everything every time. I make allowances in what I prepare, so on Sunday, a couple of chicken breasts will be on the grill next to the tuna for the non-fish eaters. There’s no sense wasting money on an expensive piece of fish when it won’t get eaten. (Well, baby boy would eat it, but no one needs that much protein!)

Comfort dinner on Monday with salisbury steak meatballs and mashed red potatoes. I use soft skin potatoes for these so I don’t have to peel them. (That’s not lazy – it’s working smart!) I use buttermilk in place of most of the butter and/or sour cream so they are not too bad for us.

Tuesday is another crock pot dinner – and it’s a family favorite. The sauce on the chicken sandwiches is based loosely on sloppy joe sandwiches, so it’s a little sweet, mostly savory, and all delicious. That menu is rounded out with peanut noodles and a cucumber salad, all items that can be held for people at work late or playing pickup lacrosse.

How cool is this picture of Coney Island, New York? It makes me want to ride a fabulous roller coaster – we need to head to Waldameer Park, here in Erieland. It has an amazing wooden roller coaster called the Ravine Flyer that looks over the lake at it’s highest point. I don’t know what you can see after that – I always have my eyes closed.
