Cheddar Jalapeno Dip – No Emergency!

Surprise!

You have guests ~ no emergency with Cheddar Jalapeno Dip.

You probably keep most of the ingredients for this dip in your fridge already. Pick up a couple of jalapenos for decorating your kitchen, and you are covered when the doorbell rings.

Turn on the oven to let it warm up, then cut a brick of cream cheese in half. This recipe doubles easily if you have more than a couple of guests – add the whole brick to your microwave safe glass mixing bowl (affiliate link). Pop it in the microwave for 30 seconds to a minute  – definitely stop it when it pops and a small globs hits the top of the microwave. {What. I’ve heard that happens.}

Add the cheddar cheese:

I always have a brick of White Cheddar in the house – that’s what we are using here. Pre-grated will work fine too.

Add the super finely chopped jalapeno and a little salt & pepper to taste.

No jalapeno?

Chop up a regular onion finely and use that instead.

No jalapeno or onion? Grate in a couple cloves of garlic.

None of those? Serve cheese dip. (And go to the grocery store next opportunity.)

 

This is even better if you have some time to refrigerate it before you warm it up. But it’s good immediately too!

Mix it well. You can absolutely serve it just like this:

If there is too much fat on the top when it’s done cooking, crumple up a paper towel and gently sop it up.

I like to serve the casserole (affiliate link) in a bigger bowl that will hold all the crackers or chips you are using. Less mess, and keeps the hot plate off the counter.

Cheddar Jalapeno Dip is perfect for those surprise guests. Jalapeno appetizer with just 3 pantry ingredients, cream cheese based and perfect on crackers or with veggies!

Ingredients

  • 4 ounces Cream Cheese (1/2 a brick)
  • 4 ounces White Cheddar Cheese, grated
  • 1 large Jalapeno, cut super fine
  • Salt & Pepper to taste

Instructions

  • Preheat oven to 400 degrees F.
  • Put cream cheese in a microwave bowl and heat on high for 45 seconds.
  • Add cheddar cheese and jalapeno and mix well. Add salt and pepper (I used a heavy pinch of each) and place in a greased casserole or oven safe dish.
  • Cook until bubbly and brown, about 10 minutes. Dab excess grease off top with paper towel if desired, and serve with corn chips, crackers or cut veggies.
