Our Weekly Menu 03.17.19 includes Saint Patrick’s Day!

Weekly Menu 03.17.19 includes a fabulous Saint Patrick’s Day feast as well as crock pot meals for the more mundane start of lacrosse season.

Lacrosse is a “spring sport” here in Erieland,

which means it starts out in the cold weather (snow on the field makes finding the ball… difficult), and after a full two to two and a half months of the sport, we can actually go to games without our winter gear on. We plan ahead with plenty of crock pot meals. They warm us up inside and out, and are ready to go whenever we (finally!) get home.

Saint Patrick’s Day starts the week, though, with a fun Sunday Night Meal. Here’s the plan for this year:

Click on the menu to take you to that full menu post and all the links. Guinness Braised Beef makes a perfect centerpiece for the meal celebrating Ireland ♣ and it’s delicious food.

If you aren’t feeling the Guinness Beef, try Cottage Pie – it also makes a perfect Irish meal, especially if you substitute lamb for the ground beef. (If you sub out the lamb, it becomes Shepherd’s Pie!) Mix up your own Saint Patrick’s Day Signature Brownies to add more green – maybe via the coveted green M&M’s?

We’re taking crockpot fire chicken and using it in a taco this week – the mellow fire makes a perfect addition to any taco shell. Add a dollop of sour cream to make it even more mellow. And if you’re watching your carbs, serve it on a bed of shredded iceberg lettuce. Perfect.
