Did spring sneak up on you too? I didn’t see it coming, but we have a little homage (very little) during the Weekly Menu 03.22.20.

One of the best ways to entertain yourself and your people is to COOK! Since we’re all sticking around home, planning a menu and executing some fun food keeps everyone fed AND occupied.

Soft Pretzel Bites are the most popular recipe on this site.

And probably the easiest too. I always keep refrigerated muffins in the house so we can make these easy pretzels. Perfect for quarantining, they go great with Honey Mustard, another super easy recipe. We’re having a ham on Sunday night (and Wednesday). So I’ll probably make a couple batches of the stuff. The Boysies adore it.

The key to the pretzels is the soda bath they go in before they’re baked. Baking = Chemistry! It’s always a surprise that dunking these is the reason they are so beautifully browned and delicious. Just look:

Look at the fun dessert we’re having Sunday: it’s a Giant Twinkie Cake! We’re all on the Covid-19 diet (so, no diet), and all bets are off. We are getting out and walking every day though, so hopefully we’ll still be able to roll off the couch when this is over.

Our Spring Homage?

Roasted asparagus. It’s new and really tender right now. Preheat the oven to 425 degrees F, put the asparagus on a baking sheet*, drizzle a little olive oil and kosher salt on them and cook until done, about 15 minutes. BOOM! Meat supplies are short around here (I have no idea where people are putting it all) so we’re using frozen boxed burgers for dinner on Monday. We’ll have a fun sauce to go with: Montreal Peanut Sauce. It sounds weird, but it is DELISH, guaranteed.

We were able to find bacon at Sam’s (BACON!!), so we’re having Bacon, Cheddar and Apple Sandwiches on Saturday. We’ll core the apples and use our mandoline to cut the apple thinly. You don’t need a mandoline – you can just slice the apples any way you want. And leave on the peel – it’s good fiber! The apples are a nice way to cut the richness of the bacon. I’m subbing this sandwich for BLT’s because none of my people like tomatoes. Or lettuce really. I’ll make another batch of Honey Mustard to go on top.
