Weekly Menu 10.07.18

We’re straddling summer/fall weather around here, so the weekly menu 10.07.18 tries to cover both. We have some classic meals as well as some meals that can be grilled if the weather holds out. (I love putting Bert to work.)

It’s a throw back Sunday this week – Rumaki are water chestnuts seasoned up and wrapped in bacon so they have a sweet, salty and smokey taste. How awesome does that sound? My mouth is watering just thinking about them.

Don’t tell anybody BUT…

I’ve posted before about Chicken Crepes – the Chicken in Cheese Sauce is actually Chicken Crepes but we dusted the crepes. Crepes look super cool, but no one really adores them, and they’re kind of a time suck. Shhh.

Mexican Pizza is a family favorite and it is super easy because we start with a tube of thin crust pizza dough. Spread it on a sheet pan and cook it for 6 to 7 minutes at 400 degrees. While it’s in the oven, cook a pound of ground beef sprinkled liberally with chili powder.

Smear warmed up re-fried beans (I use the no fat, spicy kind) across the whole crust, sprinkle on the cooked ground meat and cover the whole sheet pan with shredded Mexican cheese before popping it back in the oven for 5 minutes so the cheese is melted and bubbly.

Let everyone garnish their own – shredded lettuce, sour cream, taco sauce, tomatoes and avocado are all good options. Dinner in 20 minutes always hits the spot.
