In the throes of everything Christmas, it’s easy to become a little hum-buggy. Try not to! When you go into it planning on enjoying it, you’re more likely to actually enjoy it. Stop going overboard and take the things you want to do one step at a time. We’re all in the same boat – too much to do with too little time. Make a conscious effort to pare down what doesn’t work for you or make you happy. And make every effort to meet up and see the people that matter.

Pshew. Sorry for the rant.

Time for the food portion of the Weekly Menu 12.08.19 (finally!)

I’m hopping off the soapbox to get right to the meaty stuff – the food! We’re trying something new with Pops Crispy Chicken this week. Fingers crossed: I’m going for super simple Chicken Parm Sandwiches that stay crispy.

First, I’ll make Pops Chicken, adding in a bit of Parmesan to the breadcrumbs. I’m going to make rolls into garlic bread with a little butter, garlic powder and the broiler. Then I’m going to smear the bun with marinara and a Parmesan/mozzarella mix, before broiling until the cheese is melted. I’m going to smother the chicken inside the gooey cheesy (hopefully not soggy) bun. YUMMMMM. I’ll let you know how it goes.

We’re trying a new recipe on Weekly Menu 12.08.19 that’s been tucked into my “To-Try” binder for months: Green Chile Meatballs. It’s from Real Simple and it looks fantastic.
