Pops Crispy Chicken is healthy, baked “oven-fried” goodness ready in less than 30 minutes. Make nuggets, fingers, or patties with this versatile, easy recipe! So much better for us than fried or processed chicken.

Bert = Pops. And I’m not really sure when that happened. I think it started as a little bit of a joke with the Boysies, and quickly morphed into their all-the-time name for Bert. Often times they call him “P” – especially when they’re in a hurry. It makes me giggle every time.

Pops really likes crispy chicken.

These are Bert’s favorite chicken tenders. They’re so versatile and SO easy, we have them quite a bit, both as is and in other recipes. They are the star of Crispy Chicken Club Sandwiches and Crispy Chicken Chopped Salad as well as my favorite way to make Chicken Parm Sandwiches.

There are only 5(ish) ingredients and they take about 30 minutes from start to finish.

How versatile? Don’t get me started.

Oops. Too late. Add some chili-powder to the chicken and you have the perfect taco insert. Mix in Parmesan cheese with the bread crumbs and the chicken is ready to be topped with marinara and some more cheese. Voila, Chicken Parm. Or season with Cajun spices to heat up dinner.

Let’s get to it!

Cut your chicken. We have tenders here, which is probably the most popular way to cook them in our house. But cut the chicken into large cubes for nuggets or halve the chicken breasts for patties. (They might need to be pounded a bit to make them about the same size.)

Add the oil and toss with the chicken. Then sprinkle your seasonings directly on the chicken.

I season the chicken instead of the bread crumbs. Why? It adds more flavor directly to the chicken. It always seems like the left over bread crumbs have most of the flavor. And when I say left over, I don’t mean I save them. Once you’ve rolled the chicken in them, toss any remaining crumbs.

Spray your baking sheet (affiliate links follow – see disclaimer page for details). And spray it profusely. Then simply place the chicken pieces on the sheet. I don’t add any additional breadcrumbs – I go with whatever sticks.

After about 10 minutes, flip the chicken using a metal spatula.

The tenders/nuggets/patties are done when an Instant Read Thermometer inserted into the thickest part of the meat reads at least 160 degrees F.

  • Preheat oven to 450 degrees F
  • Cut chicken into 1/2 inch strips and place together in medium bowl. Add oil and seasonings and toss to coat.
  • Put breadcrumbs into another small bowl, and add chicken strips individually and coat well.
  • Place chicken on baking sheet coated with cooking spray, and bake for 20 to 25 minutes or until chicken is brown and crispy, turning once during cooking. Internal temp on an instant read meat thermometer should be at least 160 degrees.

Pops Crispy Chicken is probably best dunked in Heinz Ketchup.
